This recipe was inherited from one of my favorite high school office administrators who used to make them at Christmastime and on Valentine’s Day for her office runners (a highly sought after job for a few select students who had a free period and wanted to be helpful while also having complete freedom to roam the halls and deliver personal notes to friends who were in class)

Butter & Jam Cookies

1-3/4 Cups All Purpose Flour

1/2 teaspoon baking powder

1/2 teaspoon fine salt

3/4 unsalted butter, softened

2/3 cup sugar, plus more for rolling

1 large egg

1/8 teaspoon vanilla extract

1/3 cup raspberry, cherry, or strawberry jam (or any jam/preserve you prefer)

1. Preheat oven to 350 degrees. Line 2 baking sheets with parchment paper.

2. Whisk the flour, baking powder, and salt together. In a separate bowl, whip the butter and the sugar with a hand mixer - until fluffy, about 5 minutes. Beat in the egg and vanilla until just combined. Slowly beat in the dry ingredients, just until incorporated.

3. Scoop the dough into 1 inch round balls and roll in sugar. Place about 2 inches apart on the prepared baking sheets. Press a thumbprint into the center of each ball, about 1/2 inch deep. Fill each indentation with about 3/4 teaspoon of jam.

4. Bake until edges are golden , about 15 minutes. Cool cookies on baking sheets. Serve.

My husband used to make Orange Chocolate Chip Cookies, which is one of my favorite flavor combinations. This is his recipe:

Mike’s Orange Chocolate Chip Cookies

3 oz. cream cheese

1/2 cup butter

1/2 cup sugar

1 tsp. orange zest

1 egg yolk

1 tsp. vanilla

1 cup flour

1 cup chocolate chips

Preheat oven to 375.

Cream butter, cream cheese, and sugar until light and fluffy. Add orange zest, egg yolk, and vanilla. Mix well. Add flour and chocolate chips. Mix until blended.

Drop by teaspoonful onto buttered cookie sheet. Bake at 375° for 12 - 15 minutes or until lightly browned.

Oo thank you Carol! I've never even heard of an orange chocolate chop cookie before, but these remind me of those chocolate oranges that turn into orange-shaped slices when you bang them on the table. 😆

These jam thumbprints have been part of our cookie exchange for 20 years. I love the almond raspberry combination and they look pretty on a tray

What a great idea!

ICE BOX COOKIES

2 eggs

1 lb butter (4 sticks)

1 lb sugar (2 cups)

5 & 1/2 cups flour

1 teasp salt

1 teasp soda

2 teasp vanilla

1 cup or more of chopped pecans (added last- optional)

Cream butter and sugar. Add eggs, then vanilla. Sift dry ingredients and then add to mixture. Mix thoroughly and roll into long rolls. Wrap in wax paper and then plastic wrap and refrigerator or can also freeze.

When ready to serve, remove roll from refrigerator (or freezer) and bring cookies to a softened state enough so you can slice them without crumbling. (Put remaining cookie dough back in refrigerator until next time you are ready to serve). Slice off as many cookies as you want to serve and BAKE 350-375 for 10-12 minutes. Remove cookies from baking sheet and cool on paper bags.

These are my favorite Christmas cookies! They are really great too because it is so easy to have fresh delicious cookies when friends drop by.

Keep in mind, we made these cookies looooooooong before easy slice and bake cookies lined the shelves in the refrigerator section of the grocery store. But of course, homemade is always better!

Thank you Jan! I had no idea that's what ice box cookies were. These sound so simple and delicious. I LOVE the idea of having a roll of dough in the fridge to bake fresh when someone comes over.

I don't think anything is more delicious than a cookie someone makes for you (and delivers to your doorstep!!) Once I recovered from the part where you said you weren't a cookie person (😉) I immediately linked over to the recipe because A. I love the name and B. I don't think I've ever had or heard of a walnut cookie!
